After living on this private resort island for the last five months, anything other than food from the Staff Cafeteria (which we call "canteen") and my own limited repertoire in the kitchen is considered a delicacy to my taste buds. In fact, it's pure ecstasy. Food is my sex on this god-forsaken island (that I love) where the pickings are slim when it comes to men and culinary pleasure.
I spent the first two months or so trying to acclimate to a new diet of oxtails, fried fish, stewed chicken, boiled veggies and rice & peas. And I was totally proud of opening up this picky palate to new possibilities. But this Caribbean-inspired menu started to test the limits of Lycra and, as the Pilates/Fitness instructor, I had to stop being lazy and start cooking the kinda meals that would keep me looking like one. It seemed that no matter how many variations on a theme I could create with the readily available staples I could purchase from the hotel's kitchen or on my weekly journey to the grocery store (on another island), my mouth was bored. Yep, it felt desperate, needy and deprived. I'd never experienced so much "lack" in the food department. I needed passion. I wanted to swing from the chandeliers with gastronomic pleasure and then cuddle in a food coma. I'm a New Yorker, after all, where cravings are easily satisfied via Seamless.com. I missed those days of instant gratification.
Needless to say, my mouth started salivating the night before my date with Garam Masala, an Indian restaurant in the Grace Bay area of Provodenciales, Turks & Caicos. Just the idea of savoring mouthfuls of color, texture, flavor and aroma left me breathless. My 2nd chakra started to stir the moment I walked into the warm embrace of vibrant orange, deep brown, copper and gold. My Chicken Tikka was succulent, juicy and aromatic and the Garlic Naan tasted like love in a basket. Too bad it was just a quickie. As usual, I was rushing to catch one of the few boats back to my island where food feels like missionary position every. single. time.
